 RECIPES - Cherry & Ginger Eton Mess  


Ingredients

4 x meringues (120g total)
200g fresh cherries
1 tbsp caster sugar
300ml ginger wine
2 tsps cornflour
300g 3% fat Greek yogurt

Serves 4 351 Calories per serving


Method

Stone the cherries and place in a saucepan with the sugar and wine and heat. Mix the cornflour with a little cold water and whisk into the fruit.
Bring to the boil to thicken then remove from the heat and allow to cool.
Assemble 4 desserts by layering broken meringue, yogurt and cherries. Serve straight away.
Tips
Assemble at the last minute to prevent this dessert getting too soggy.
