RECIPES - Low-fat Fruity Bread Pudding


Ingredients

75g Mixed dried fruit
150ml Apple juice
115g Diced stale brown bread
1 Teaspoon Cinnamon powder
1 Large Banana sliced
150ml Skimmed milk
1 Tablespoon Demerara sugar

 


Method

1.Place the dried fruit and apple juice into a small pan and bring to the boil.
2.Stir the bread, spice and banana into the fruit. Spoon into a shallow ovenproof dish. Pour the milk over the mixture and sprinkle the sugar on top.
3.Bake in oven at 200C/400F for 30 minutes.
4.Serve hot or cold with low fat custard.
