 RECIPES - Spaghetti Bolognese  


   Ingredients

  1 small onion, peeled and chopped
  2 cloves of garlic crushed
  1 small carrot, peeled and chopped
  Low fat one cal spray oil
  2 cloves garlic, peeled and crushed
  1 bag quorn mince
  Splash of balsamic vinegar
  3 fl oz chicken or vegetable stock
  1 x 400 g chopped tomatoes
  Salt and pepper
  1-2 tbsp chopped parsley
  1-2 tbsp chopped basil
  Some grated Parmesan to serve ( use sparingly)

Method

Put onion , garlic and carrot in a food processor and finely chop, or chop by hand. Put a few squirts of the one cal oil in a large frying pan. Add chopped vegetables and cook until light golden.
Turn up the heat, add garlic and quorn mince (careful quorn tends to pop like popcorn) and fry for a few mins. Pour in the wine, stock, tomatoes and a splash of balsamic vinegar and a little pinch of sugar sweetener or squirt of honey. This is just to help to reduce the acidity of the tomatoes. Simmer uncovered for 20 mins until quite thick.

Add the chopped basil and parsley and season to taste. Pour the sauce over cooked spaghetti and sprinkle with Parmesan.
